Chocolate Pudding Canning Recipe

A rich chocolate pudding perfect chilled in the fridge or canned for later.

Ingredients

  • cup White sugar
  • 1 cup Cocoa powder
  • 6 tbsp Tapioca starch
  • ½ tsp Salt
  • 6 Egg yolks slightly beaten
  • 6 cup Milk
  • 1 tsp Vanilla

Instructions

  • Mix the first 4 ingredients in a large pot.
  • Beat together milk and egg yoks.
  • Gradually add to pot while stirring, combine well.
  • Using medium heat and stirring continuously, bring the mixture to a boil for 1 minute.
  • Remove from heat and stir vanilla.
  • Fill 24 sterilized ¼ pint jars leaving ½ inch head space.
  • Wipe Rims and screw on the lids finger tightly.
  • Pressure can for 10 minutes at 10lb. Be sure to adjust if needed for your altitude.
  • Water bath for 1 hour.

Notes

Any milk can be used in this recipe.  Recipe may seem runny but will thicken as it sets.
