Banana Split Jam

Great on fresh warm biscuits or as an ice cream topping

Ingredients

  • 2 Cup bananas mashed
  • ½ Cup lemon juice
  • 2 Cup strawberries crushed
  • Cup pineapple crushed
  • 1 Cup maraschino cherries Halved
  • 1 sugar reduced pectin
  • 3 Cup sugar white
  • ½ Cup chopped walnuts optional
  • ½ Cup banana rum or dark rum optional
  • 1 tsp vanilla extract

Instructions

  • Mash bananas with a fork.
  • Add lemon juice.
  • Combine all the fruit and the pectin in a large pot.
  • Bring to a boil, stirring frequently.
  • Add sugar and return to a boil, boil till it starts to set on a spoon.
  • Remove from heat and add nuts, vanilla and rum, if using
  • Fill sterilized jars, leaving ¼ inch headspace. Wipe rims and screw on lids.
  • WB for 10 minutes.
